OIL & HERB BLEND
Mix in small bowl
Italian herbs (your favorite blend or get creative)
Chili pepper if you like a little kick
Olive oil / Extra Virgin Olive Oil
My kids love them with that mix above, but you can also add pepper or other seasonings to your taste.
Mix well and set aside to let herbs and spices soak up the oil while you prepare the potatoes
8 Medium Sized Russet Potatoes
Wash – leave the skins on
Quarter – length wise
Boil for approximately 10 minutes depending on exact size of potatoes maybe a little less.
Strain, towel try
Lay out on pan skin side down
Using pastry brush apply the oil and herb blend to both sides of the exposed potato, but not the skin side.
Let sit for a for a few minutes so excess oil drips into pan
Grill on each exposed side of potato for a few minutes (not the skin side) until grill marks appear and the potato is a golden color
